Chicken with Green Curry Sauce

Another fabulous recipe from Melanie over at My Kitchen Cafe. This dish was easy to make and oh so tasty. We all enjoyed this at our house and my two year old could not get enough of it. I served this with some garlic naan and it was the perfect compliment to the meal.

Chicken with Green Curry Sauce
adapted slightly from Robin Miller


2-3 boneless skinless chicken breast halves, sliced into 1/2-inch strips
Salt and freshly ground black pepper
1 tablespoon olive oil
1 (14-ounce) can coconut milk
1 (4-ounce) can diced green chilies
1 teaspoon curry powder
1 teaspoon Garam masala
1 teaspoon ground cumin
1 cup couscous, cooked according to package directions
2 tablespoons freshly chopped cilantro leaves

Season both sides of chicken with salt and black pepper. In a large skillet, heat oil over medium-high heat. Add chicken and cook 2 minutes per side until golden brown.

In a medium bowl, whisk together coconut milk, green chilies, curry powder, garam masala, and cumin. Add mixture to chicken and bring to a simmer. Simmer 5 minutes, until chicken is cooked through and sauce reduces slightly. The sauce will be quite runny. To thicken it up a bit, I mixed one teaspoon cornstarch with 2 tablespoons cold water and added it to the sauce and let it simmer for a few minutes to thicken. Serve chicken and green curry sauce over couscous and garnish with cilantro.

A Very Special Little Boy

I am so behind on my blogging, but hope to find time to catch up soon. Working 6(crazy) days a week, starting school again, finding time to work out and being busy with my usual home and mothering duties is kicking my trash but the payoff in the end will be worth it. Despite all that has been going on, we have still been doing some fun things as a family and I have still been busy whipping up new and yummy dishes in my kitchen to feed my little family. I look forward to sharing my latest recipes soon.

This blog however, is not about me and what I have been up to, but rather this blog is a tribute to the smartest, most handsome, most polite and spunky 2 year old walking the face of this planet.

My baby turns 2 today! I can't believe he is two already. These past two years have flown by. Gabe has brought more joy into our lives than I could ever have imagined. He is so incredibly smart and is constantly making us laugh with his little antics.

He loves to sing songs, knows his alphabet, knows all of his animals and their corresponding sounds and will point them out in pictures and tell us their names, when reading books will tell us what is happening in the pictures, he can identify all of his aunts and uncles in pictures (even the ones he only sees every few months)by name, knows all of his body parts, can count to 10 etc.

So much like his daddy he is already very observant when it comes to cars. He knows the makes and models of some of our family cars. In particular he knows Nana and Pappa Bentley have a suburban, a tracker and a Saturn and he will point out the exact same makes and models wherever we go and will tell us if it is a Nana's car, Pappas Car, Mummy's car, Daddy's car etc. He also has a good memory for places and will recognize businesses (where family members work) etc telling us as we get close where we are going.

He loves to master new words and often doesn't give up until he knows he can say a word correctly. He is already especially good at words containing 3 syllables such as coconut (this is what he names his pet fish), cucumber, chocolate, etc. For the past couple of months has been starting to talk in sentences and even asking questions. Some of his most common sentences are "What's this?", "Right here", "Where did mummy/daddy go?" "Come on Mamma", "I'm helping Daddy", "Time to clean up", "Wash my hands" "It's hot" "I don't like it", "Holy cow", "Holy Crap", "Oh my gosh" "Holy Moley" "Oh shoot" "Oh my goodness" to name a few (that I can remember at least). He is such a little talker and he loves to have conversations with anyone willing to listen.
