One day after I had moved to the States, I was looking for a recipe to use up some over ripe bananas and my mother in law gave me this one. It is my favorite banana bread recipe and has been for over 5 years now. I'll be honest I haven't tried any others because I love this one so much and so really haven't had the need. I have made it with and without the chocolate chips and it is fabulous either way. I must admit though there is just something magical about a slice of warm banana bread with melted chocolate chips inside smeared with butter. Mmmmmmm. My husband especially loves this and is always excited when I make it. I learnt this weekend that my son loves it too!
This bread is moist and delicious and WILL NOT disappoint.
Aunty Melinda's Banana Bread

3 eggs
1 cup of oil (you can substitute 1 cup of apple sauce to cut fat- I've done it and it doesn't affect the taste or texture of the bread at all!)
2 cups of sugar
2 heaping cups of mashed bananas
3 cups of flour
1 teaspoon of baking soda
1 teaspoon of salt
1 tablespoon of cinnamon
1/4 teaspoon of baking powder
1 1/2 cup of milk chocolate chips (I like milk but use whatever you like)
In a large bowl, mix eggs, oil, and sugar together. Add dry ingredients, mix well. Add chocolate chips last.
Grease and flour two loaf pans. Pour batter in, dividing it equally.
Bake at 325 degrees for 1 hour. Don't over bake or the bread will begin to dry out.

I do love banana bread and this recipe looks great. I did make the cheesy rolls and they were delish. I'm going to post them this week.
