Oh My - Chicken Pillows

I had seen recipes for these on various blogs in the past couple of months and thought they looked good but just hadn't been in the mood to actually make them. On Saturday I thought I'd give them a go and boy was I glad I did. These were really easy to make which surprised me and they were oh so yummy. We had some friends over for dinner- I think of them as my Guiney Pigs because they are often over on Saturday night for dinner and are therefore forced to try my latest concoction. Much to my delight everyone was impressed. There seem to be quite a few variations of this recipe out there but I based mine off this recipe from the blog of Real Mom Kitchen.

3-4 cups chicken, cooked and cubed- I used Rotissere chicken for ease and flavor
6 oz of cream cheese, softened
2 -4 tablespoons green onion, diced- I omitted these because I didn't have any
1/3 cup chopped mushrooms (I omitted these because we are not mushroom fans)
2 tablespoons butter or margarine, softened
¼ teaspoon salt
1/4 teaspoon garlic powder
Sprinkling of garlic and herbs from Mrs. Dash
Dash of pepper
2 cans of crescent rolls
Bread crumbs
1 stick melted butter

In large bowl, mix together cream cheese, green onion, mushrooms, 2 Tbsp butter, milk, salt, pepper, garlic powder and herb sprinkle. Stir in chicken and set aside. Open crescent rolls and carefully unroll dough. Separate each tube into 4 rectangles. Seal seam in center of each rectangle. Place one heaping tablespoon on half of each rectangle. Fold over other half of roll dough and seal edges, creating a pillow. Dip the top of each pillow in melted butter and then bread crumbs. Place on baking sheet. Bake at 350 degrees for 15-20 minutes or until golden brown. Serve with cream sauce.

Cream sauce:

1 can cream of chicken of chicken soup
1 cup sour cream
1/8 teaspoon curry powder
1 tablespoon mayo
Milk- just enough to get it to your desired consistency

Combine ingredients in sauce pan and cook over medium heat until heated through.



I'm a HUGE fan of these Mrs. Dash herb sprinkles. I use them in almost everything to add a little extra flavor. They are also awesome for marinating meat. I love to coat a chicken breast with a little olive oil- sprinkle it with Mrs. Dash and then after a couple of hours of marinating grill the chicken. Tastes like summer BBQ all year round! YUMMY!
